Chef Jorge Luis Pabon (Mili, NYC)
Jorge grew up in Puerto Rico, in a household where food and gathering were always central. That spirit continues to shape his cooking today. He’s worked in some remarkable kitchens; El Celler de Can Roca, The French Laundry, Marcus in London, and most recently served as Executive Chef at Estela NYC, where he focused on bold, seasonal dishes with global influence.
He also helped open celebrated New York restaurants including Agern, Manhatta, and Great Jones Distilling Co., further honing his craft and leadership in dynamic, high-profile kitchens.
